tinned fish cakes

oh, tinned fish, my old friend. what can’t you do? lately i’ve been turning tinned sardines into crab cake like treats for lunch and really can’t recommend it enough.

here’s what you’ll need:

  • a tin of fish (i’ve been using the Season brand sardines in olive oil, they come in a six pack from Costco)
  • breadcrumbs
  • an egg
  • green onion
  • spoonful of dijon or mayo
  • salt & pepper to taste

i also occasionally add a little bit of chopped sundried tomatoes or capers if i’m in the mood, but you can really take them any direction you’d like.

ok. so you have your ingredients. chop up the green onion all the way down to the root. dump everything into a mixing bowl, including the oil from the tin. mix all that up until it starts sticking together. one tin of fish usually makes 2-3 cakes, depending how you size them and what other ingredients you include. heat up a pan with a little bit of oil and spoon your cakes in there. smash them a bit so they are even thickness throughout.

a couple minutes on each side, and you’re done! you can eat them as-is, or treat them like a fish patty for a sandwich. personally i like to toast a hamburger bun, spread a little bit of mayo and/or mustard, some spinach, some hotsauce and maybe a slice of cheese too if i’m feeling frisky. a slice of tomato would be good if they’re in season.
